Plated Dessert

This plated dessert is a lemon dessert tart made from a lemon cream and presented on a crisp lemon short dough crust.  The sauce is a red currant jelly and the plate is garnished with a caramel decoration made by striping caramelized sugar onto a cake decorators wheel then while still warm the sugar is trimmed into shape.
