Baumkuchen has been used here as a foundation for a plated dessert that includes a wine cream with strawberry coulis and a piped chocolate decoration. The "King of Cakes"; Baumkuchen is also the symbolic icon of German pastry chefs and crafting the ideal cake is considered a revealing test of their skills. It is baked layer by layer in a rotisserie type oven, using an almond cake batter, until between 20 or more layers have accumulated. The resulting log like cake reveals its characteristic concentric rings when cut cross wise, hence the name Baumkuchen, or literally, "Tree Cake". To seal in moisture and impart additional flavor, Baumkuchen is typically coated with apricot glaze or enrobed with chocolate and is utilized in every aspect of the pastry shop.
