Pastillage Showpiece Dolphins make graceful subjects and are beautiful even when crafted from sugar. Here they appear almost suspended in air. This pastillage showpiece was made as a quick trial in bringing the initial idea to form. The recipe for producing a sugar showpiece like this differs in that the pastillage is allowed to mix in the machine bowl with a dough hook attachment until air is incorporated into it and it takes on a lighter and almost spongy consistency. The incorporated air allows pastillage to be used for larger pieces as it will dry quickly and evenly. Additionally, the light weight gives the finished pastillage sculpture greater strength and allows it to be worked quite readily. A pastillage recipe may be found in the recipe section.
