Abstract Pastillage Showpiece As you can plainly see, this simple pastillage showpiece is made using a drafting set of French curve templates as a guide for cutting the pastillage. To avoid cracking the quickly drying pastillage, slide it off the surface that it was cut on to a flat, rigid and absorbent surface where it can be allowed to dry overnight. As water migrates to the bottom of the pastillage sections, it is helpful to turn them over midway through the process to speed drying and to avoid warping. When completely dry, position the various elements as desired and then secure with simple syrup thinned pastillage that has formed a paste. A pastillage recipe may be found in the recipe section.
