Pulled Sugar Recipe

Sugar Water |
Bring sugar and water to a boil. Stir frequently at this point to ensure that sugar is dissolved. Remove scum that forms on the surface. Wash down sides of pot with a pastry brush in water. |
| 1 lb | Glucose | Add glucose. Bring solution to a boil, skim surface and wash sides of pot. |
| To Taste | Food Color | Add color at 126 C. |
| 20 drops | Tartaric Acid | Add at 138 C. |

Cook sugar to 154 C.
Remove from heat and pour directly on oiled marble or silicon mats.
Allow to set until cool enough to begin pulling. At this point begin
pulling sugar until a high gloss is obtained. Immediately cut in
strips with a knife or scissors and allow to cool.
Store in airtight container with a food grade desiccant such as quicklime or silica gel crystals. |
