White Modeling Chocolate Recipe

White Chocolate
Cocoa Butter
Melt white chocolate and cocoa butter and allow to cool to 90 F.
2 lb
8 oz
Glucose
Simple Syrup
Add ingredients and mix only to incorporate.  Pour onto parchment lined sheet pan and cover with plastic wrap.
    Chill in refrigerator until completely hard.  Allow to come to room temperature and mix to a smooth consistency.
